These homemade granola bars are my all time favourite snack on the go. They combine oats and rice crispy cereal for the base, and the honey, maple syrup and chocolate chips make then chewy and sweet!

Cooking With Clayton – Basic Blueberry Muffins

Blueberries are a favourite in our house. I often purchase 2 large boxes each summer in berry season. These wild berries in this recipe were frozen from last summer’s berries. The wild harvested berries are smaller than the ones you purchase in stores throughout the winter. You will find the larger berries will break open when stirring into the batter, creating a blue muffin…which will taste fine, but will not look identical to the ones pictured.

This is another basic muffin recipe, you could use the base recipe with other berries, or evenchocolate chips in place of the blueberries.

Strawberry Muffins – Baking with Kids

Strawberries, they are one of those berries that I love just as they are, or in a dish with a little cream and maple syrup (yes, that is a real treat!). I remember, as a child, waiting for strawberry season every summer so we could enjoy strawberry shortcake. When we would visit my grandmother or aunt & uncle in Cape Breton, there were usually a few churches around the Cabot Trail hosting a Strawberry Tea, and we would go to more than one!

Today Clayton asked if we could bake some muffins. He is my picky eater, so I asked him what he wanted to try.  He said Strawberry, at the beginning of March…so we are going to give them a shot! I cannot guarantee he will eat them, but perhaps by letting him make them, he will be more interested in eating them as well.

Tuna Casserole is quick to make and includes ingredients you likely already have on hand.

This casserole can be mixed up and baked for tonight’s supper, or frozen in a freezer bag to prepare another evening.
