Chicken "Pot Pie" Wreath

Here's my take on an easy Chicken Pie! Crescent rolls were on sale a few weeks ago for $0.99 a package. I picked up 4 and here is what I did with 2 packs.

Over the holidays, my mom was visiting and when we have company, I like to serve more planned meals that are easy to throw together. This was one of the meals I made that is quick and super easy....and delicious.

INGREDIENTS

  • 2 pk Crescent Rolls
  • 2 cups cubed cooked Chicken
  • 1 cup Frozen Peas & Carrots (cooked)
  • 1 can Cream of Chicken Soup
  • Salt & Pepper to taste.

 

- Place crescent roles in a circle to form a "sun". Using floured fingers, press the dough flat around the center of the wreath, giving you about 2 inches of solid dough all the way around the ring.

- In bowl, combine remainder of ingredients and stir.

- Scoop spoonfuls around the dough wreath. Create a full circle around the  wreath shape.

- Fold the points of the crescent rolls up over the chicken mound and connect to dough at inside of the ring.

- Bake at 375 degrees for 20-22 minutes.

Makes 4-5 servings

tacostuffedpeppers My in laws have a good sized garden and I often get a few veggies when we visit. Our last visit resulted in some fresh peppers. My husband does not enjoy raw peppers in salads or anything similar, so I decided to try stuffed peppers. Stuffed Peppers were a food I never enjoyed as a child, but like so many things we turn our noses up to as I child, now I find I truly enjoy them. This version replaces the traditional use of beef with ground Chicken. In addition to the classic rice and meat stuffing, we changed it up and made a "taco" version! Chili powder, black beans, corn and salsa add to the experience, bringing you a truly different stuffed pepper. 20160819_170729 We found that stuffing the peppers as "boats" made the recipe go a little further.

Chicken Taco Stuffed Peppers

  • 6 Peppers (sweet or green)
  • 1 lb Ground Chicken
  • 2 tsp Chili Powder
  • 1/2 cup Rice (cooked (your choice))
  • 1 clove Garlic, minced (OR 1tsp Garlic Powder)
  • 1 tsp Onion Powder
  • 1/2 cup Black Beans (rinsed and drained)
  • 1/2 cup Corn
  • 1 cup Salsa
  • 1 cup Crushed Tomatoes (or tomato sauce)
  • 1/2 cup Shredded Cheese (Mozzarella or Cheddar)
  1. Cut tops off peppers and remove seeds and stems. Or slice peppers in half, top to bottom, to create a "boat", remove seeds and stem. 
  2. Place peppers in baking dish to fit. And set aside.
  3. Brown ground Chicken in frying pan with chili powder, garlic & onion powder.
  4. Once browned, add cooked rice and stir to combine. Remove from heat.
  5. Stir in black beans, corn and salsa to combine well.
  6. Stuff peppers with meat and rice mixture.
  7. Pour tomatoes/sauce over top of peppers then top each pepper with a little cheese.
  8. Bake for 35 minutes at 350°.

Honey Dijon Chicken

Honey Dijon Chicken via Tip Hero I love chicken, and this looks like a amazingly simple yet flavourful recipe to make. Placing the whole meal on a cookie sheet to bake will give you time to do up any dishes used to make the meal. I love having time to clean up before I eat. This recipe can be found here: Here

Freezer/ Slow Cooker Meals: Orange Chicken

 
Here is another of my favourite Chicken Freezer recipes. I have adapted it to freeze ahead and cook in the slow cooker.

Prep the bags, freeze, then pop into the slow cooker to have an easy and yummy supper. I LOVE the convenience of stocking my freezer with these made ahead meals.
Before you start: 
  1. Place your ingredients on counter with a mixing bowl for each recipe.
  2. Label freezer bags with Recipe name, date and any additional instructions.
  3. Leave meat in the refrigerator until you are assembling the packs.
I have included measurements for 2 freezer packs to serve 2 adults. If you require enough for 2 adults and 1 child, you can use the same sauce measurements, and simply add another chicken breast or thigh. If you are looking for meals for 4 or more, simply adjust measurements to accommodate.

Orange Chicken
Label Freezer Bag: Orange Chicken, Date, 6 hours in slow cooker on low.
Top with 1 tin Mandarin Oranges and 2 chopped green onions. Serve over Rice.
 
2 large Carrots, chopped
1/2  Red Onion, chopped
1 Pepper, chopped (I used 1/2 red & 1/2 orange, you can use green or any you like)
 
3 cloves Garlic, minced
2 tsp ground Ginger
1 tsp Salt
1/4 tsp Pepper
1 can Frozen Orange juice
4 Chicken Breast or Thighs
To Add after cooked:
2 tins Mandarin Oranges
1 Green Onions
 
Chop veggies and divide into two freezer bags.
Mix sauce ingredients together in bowl.
Add chicken to the two freezer bags, and pour 1/2 sauce over each.
Remove air from bag, seal and freeze flat in freezer.
 
*** You can also cook rice ahead of time and freeze. Simply freeze serving portions in zippered freezer bags and freeze. To use, place in a bowl or sink of hot water. Pour in a bowl and fluff to serve with your meals. ***

  • 2 Tbsp Vegetable Oil
  • 3 cloves Garlic, minced
  • 4 Chicken Breast or Thighs

Add chicken to the two freezer bags, and pour 1/2 sauce over each.
Remove air from bag, seal and freeze flat in freezer.
