New Year! It’s time for a new homecooked meal strategy (or implementing one I know has worked for us in the past!). One of the ways I like to stay on track with family meals, instead of eating out or making completely unhealthy choices, is by preparing Freezer Meals. By creating a monthly freezer meal workshop, we are not prepping EVERY meal for the month, but we are starting a prepped meal stock in our freezer. Last night on the “In The Kitchen ” Facebook live, I prepped Homemade Hot Pockets and Beefy Quesadillas.
Hot Pockets are a great option for work and school lunches or even packed up for a road trip. You will need a few hours to make and prep these, but over an hour of that time is allowing the dough to rise, giving you time to prep other meals or the fillings for the hot pockets.
This week on Sunday Night Live, over on our Facebook page, I shared two Chicken Dump Freezer Meal Recipes.
Dump recipes are simple and easy to assemble freezer meal. Simply label your freezer bags with the recipe name and any cooking instructions.
Don’t you just love good comfort food? Pasta casseroles are one of my fave comfort foods.
Tuna Casserole is quick to make and includes ingredients you likely already have on hand.
This casserole can be mixed up and baked for tonight’s supper, or frozen in a freezer bag to prepare another evening.

Below you will find the ingredients for each recipe. They are all to feed 4 to 6 people (if you have young children you will get 6 servings). I will be prepping 2 meals for each recipe. It is more efficient to prep more than one of the same meal.
