Homemade Pancake Mix

 

I used to always buy the store boxed pancake mixes and then end up throwing most of it out because we didn’t really enjoy the bland pancakes and only ate them every few months. Once opened, the mixes should be used within 2 months to be safe (even if the expiry date is longer).

Over the years I have tried several pancake recipes and this is the best basic recipe I have come up with. We cook a large batch of pancakes up and freeze them for quick breakfast. Simply making them small enough to fit in the toaster, so we just pop in on high, then grab and go!

Adding blueberries, chocolate chips, chunks of apple or banana will put a twist on these and give your family something different every now and then. When we have fresh berries, we heat maple syrup on the stove and then add the berries to make a berry syrup to top our pancakes with.

Another pancake option is making them tiny, the size of cookies, for a handheld snack on the run. Simply toast and butter, wrap in a napkin and you are ready to go!

You can make larger batches of this mix if you know you will use it up within a few months. Stored in an airtight container, this mix will be fresh for a few months in a cool dry location.

Ingredients

  • 4 Cups Flour
  • 3 Tbsp baking powder
  • 3 tsp Baking Soda
  • 1 tsp Salt
  • 2 Tbsp Sugar (Plus 2 tsp sugar)

Instructions

  • Mix the all ingredients together and store in airtight container.

Notes

To Prepare you will need: (serving 4 people)
  • 1 Cup Pancake Mix
  • 1 Egg
  • 1 Cup Milk (I usually use buttermilk or 1 cup milk with 1 tbsp vinegar, let stand 3 minutes)
  • 1 Tbsp Butter, melted
Scoop one cup of dry pancake mix into a bowl. Add one egg, one cup of milk and one tablespoon of melted butter. Whisk until smooth.
Scoop mixture into hot skillet and turn when bubbles appear on surface of batter. Cook until golden brown on both sides.
These can be frozen & pop in toaster for a quick & easy breakfast.
Variations:
Add the following combinations to your pancakes to make them an extra special treat!
  • Blueberries & Nutmeg
  • Diced Apples & Cinnamon
  • Chocolate Chips (cook 1 side first then add chocolate chips and flip)
  • Dried Cranberries or other dried fruit chopped up

  1. I mix a full receipt at a time using buttermilk 1 litre. Freeze the extras and thaw as needed in the microwave. Will be trying the dry mix the next time i make pancakes.(This will save some freezer space)

  2. Will this work for fried Oreos? My kids are begging for some, but don’t like going to the store for pancake mix 🥺
