Spaghetti with Roasted Tomatoes

Whenever I have tomatoes in excess, or find some on the “reduced” rack at the store, I roast them. They make for a sweet intense flavour that is very different than using just plain fresh tomatoes. 

 

Spaghetti with Roasted Tomatoes

Savoury and simple pasta dish. I love picking up tomatoes on the discount rack, bringing them home to roast them. They are so sweet and savoury.

Ingredients

  • 4 Cups Grape Tomatoes halved
  • 2 Tbsp olive oil
  • Sprinkle Salt
  • 1/2 tsp Sugar
  • 2 cloves garlic minced
  • 1 tsp Red Chili Flakes
  • 1 Tbsp Fresh Oregano chopped
  • 1 Tbsp Fresh Basil chopped
  • 1 lb Spaghetti

Instructions

  • Cut tomatoes in half and place in a glass bowl.
  • Toss tomatoes with remaining ingredients.(except spaghetti)
  • Spread out on a cookie sheet. I usually make sure all cut sides are facing up.
  • Bake at 300° for about 1 hour, or until roasted. You can then puree with a little parmesan cheese added and serve with spaghetti.
