We have tried different variations of these over the past few years. They are quick, easy and so filling in the mornings!
Below is the basic recipe and I will add variations at the end. The possibilities are endless. Feel free to share your ideas and suggestions for various combinations and flavours.
2 boiled Potatoes, cooled and diced
3 Sausages, remove wrapping
1/4 cup Salsa
1/2 cup grated Cheese (your choice)
8 – 12 large Tortillas (we usually do some large and some small for kids)
COOKING & PREP:
Brown sausage in frying pan until cooked. Remove from pan and place in large bowl.
In same pan, scramble eggs until cooked. Place in bowl with sausage. Then fry up potatoes until browned.
Mix potato, eggs and sausage together.
Place Tortillas on flat surface and sprinkle with cheese and add a spoonful of salsa. Top with Egg mixture. ( I use a chopper to create a more even texture and blend flavours)
Do not over stuff. Wrap the Tortillas and turn ends in. Place on plate or cutting board until all are wrapped.
Once assembled, wrap each individually in plastic wrap and place in freezer bag.
Remove from plastic wrap, place on microwave safe dish and microwave for 45-60 seconds. Check if heated though, add more cooking time if needed.
Variations we have tried:
-Use bacon or ham instead of sausage.
-shred raw potato and fry up or use frozen hash browns
-Add veggies: Shredded carrots, spinach, onion, broccoli, etc.
-try seasonings instead of salsa.
You can use whatever you like in these. Just be sure not to have a high moisture content in the filling.
You can leave salsa out before freezing and add when you heat them up. Use mayo or other sauces by simply adding them when you are going to eat it.
