The secret to good Bruschetta is Fresh Basil & Great Aged Balsamic Vinegar. I first had this at a restaurant in Victoria BC. It was so Delicious I had to ask the secret!
For 2 people :
- 2 Roma Tomatoes – chopped
- 1 clove Garlic
- 2 tbsp Sunset Gourmet Balsamic Vinegar
- 3 leaves of chiffonade or chopped basil
- ¼ cup shredded mozzarella cheese
- Bun or Baguette
Directions: Mix tomatoes, garlic, vinegar and basil. Let marinade for 30 min-2 hours.
Cut your baguette into 1 inch pieces or if using a bun of some type just toast under a broiler or in a toaster oven. Add tomato mixture to bun or baguette pieces & cook for 8- 10 mins at 400 degrees. Next add shredded cheese and broil until cheese is golden brown!
