Blueberry Muffins

- 2 cups blueberries
- 2 Tbsp flour
- 1 egg
- 1/3 cup vegetable oil
- 3/4 cup milk
- 1 tsp vanilla
- 1/2 cup sugar
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
Instructions
Preheat oven to 350°.
Toss berries with 2 Tbsp flour in bowl, then set aside.
3.in a large bowl, whisk together egg, oil and milk.
Stir in sugar.
Add flour, baking powder and salt. Stir to combine well.
Fold in berries. And then scoop into lined muffin tins.
Bake at 350° for 20 to 25 minutes.
Notes
Cool and enjoy! This recipe makes 12 muffins.
