Another make ahead idea breakfast idea — PANCAKE MIX
- 4 cups flour ( can use half white – half whole wheat)
- 3 tablespoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 tablespoons plus 2 teaspoons sugar
Store in air tight container.
To make pancakes for 4 people:
Scoop one cup of dry pancake mix into a bowl. Add one egg, one cup of milk and one tablespoon of melted butter. Whisk until smooth.
Cook as usual for pancakes. These can be frozen & pop in toaster for a quick & easy breakfast.
Variations: #1 add cinnamon & nutmeg for a bit of spice
#2 Add blueberries & nutmeg
#3 Add Diced apples & cinnamon
#4 for Special treat add chocolate chips (cook 1 side first then add chocolate chips once flipped)
#5 Add dried Cranberries or other dried fruit chopped up
#6 Use your imagination!
