In The Kitchen: Sheet Pan Roasted Veggies

Roasted vegetables are a staple in our home. When life gets a little crazy, it is nice to have some of these veggies roasted and prepped in the fridge for a quick reheatable option on busy nights. INGREDIENTS:
▪︎ 3 or 4 Carrots
▪︎ 1lb Brussel Sprouts
▪︎ 2 or 3 Parsnips
▪︎ 1 red onion
▪︎ 1 Broccoli Crown
▪︎ Mushrooms
▪︎ 2 Tbsp Olive oil
▪︎ 1 Tbsp Greek (or other) seasoning
▪︎ Sprinkle Salt & Pepper
You will also need:
• Bar pan/cookie sheet pan with sides
• Parchment paper or silicone mat
• Cutting board
• Knife
• Spoon or silicone basting brush

  1. Preheat the oven to 400°. Line a large cookie sheet (with sides) with parchment paper or a silicone mat.
  2. Peel Carrots and cut into ‘sticks’, cut onion into chunks, halve the brussel sprouts, cut Parsnips into wedges and broccoli cut to the desired size.
  3. Place veggies on the prepared sheet in rows. Leaving onions and mushrooms off the sheet for now.
  4. Mix 2 Tbsp oil and 1 Tbsp of seasoning together and drizzle over veggies.
  5. Bake for 25 minutes, remove from oven, add onion chunks and stir the veggies together. Place back in the oven for 15 more minutes.
  6. Remove from oven and add mushrooms. Bake for 15 – 20 more minutes.
  7. Remove vegetables from the oven and eat, or let cool completely and store in a container with a tight-fitting lid in the fridge to use later. (Reheat in microwave or oven)

ADDITIONAL SEASONING OPTIONS:

  • Roasted Garlic: Add a few cloves of garlic to the roasting pan.
  • Pesto Vegetables: Reduce the olive oil. Toss the vegetables in your favourite pesto before baking.
  • Balsamic Vegetables: Add 1 tablespoon of balsamic vinegar prior to roasting. Line the pan with foil or parchment paper for easy clean-up.
  • Mediterranean Vegetables: Season with Greek seasoning and a touch of red wine vinegar. Add sliced olives & sprinkle with feta cheese just before serving.
Add Onions and Mushrooms, stir to combine and then bake for 15 minutes.
