Chocolate Zucchini Cake
Do you have a garden bursting at the seams with Zucchini?
Most people have a huge harvest and struggle to use it up.
I love it grilled, stir fried and use it grated in recipes. We also use a spiral cutter to make Zoodles, in place of spaghetti noodles (zucchini noodles).
Today I would like to share a recipe that you and your family will love!
Zucchini Cake is easy and so yummy, no one will know it is packed with zucchini goodness 🙂

CHOCOLATE ZUCCHINI CAKE
- 1/2 cup butter, softened
- 1/2 cup canola oil
- 1 3/4 cup white sugar
- 2 eggs
- 1/2 cup buttermilk
- 1 tsp vanilla
- 2 1/2 cup flour
- 4 Tbsp cocoa
- 1/2 tsp baking powder
- 1 tsp soda
- 1 tsp salt
- 2 cups zucchini, grated
- 1 cup chocolate chips
In a large bowl cream butter, oil, eggs and sugar.
Add buttermilk and vanilla.
In a separate bowl, sift dry ingredients together.
Add to creamed mixture until just combined. Then fold in zucchini.
Spread in a greased 9×13 inch baking pan. Sprinkle chocolate chips over the top.
Bake at 325 degrees for 40-45 min.
This cake freezes well.
* TIP: freeze in small squares wrapped in plastic wrap, then foil. Put in school lunches.
