Make Ahead Breakfast Burritos

Breakfast is the most skipped meal, and yet, the most important one to kick start your day!

Breakfast Burritos
Simply make and freeze to heat up when you want one.

We love these to have on hand. Quick breakfast on the go. You can make them a little different for each family member’s preference.

Variations we have tried:

-Use bacon or ham instead of sausage.
-shred the raw potato and fry up or use frozen hash browns
-Add veggies: Shredded carrots,  spinach, onion, broccoli, etc.
-try seasonings instead of salsa.

You can use whatever you like in these. Just be sure not to have high moisture content in the filling.
You can leave salsa out before freezing and add when you heat them up. Use mayo or other sauces by simply adding them when you are going to eat it.

 

We usually add salsa to about half of ours, as one of our boys likes them without. This adds a little zing to the burrito. You can easily leave the salsa or ketchup out of them, then add after reheating. Simply unroll a little after heated, be careful as it could be very hot, and add salsa (or ketchup, if you like).

To heat from frozen: Remove plastic wrap, place on plate and microwave for 45 seconds. It may need longer, add time in 20 second intervals until heated through.

Fast and hearty Breakfast option for on the go. This recipe is a family favourite and can be changed up to suit your family's favourite combinations.

Ingredients

  • 10 Flour Tortillas Large
  • 4-6 Eggs
  • 2 cups Frozen Hash Browns
  • 3-4 Sausage remove wrapping
  • 1 jar Salsa

Instructions

  • Prep all the above ingredients and then using a flat surface, place a small amount of cheese in a line in the center of the tortilla. 
    Add other ingredients. You can mix eggs, hash browns and veggies together in a bowl, then scoop out. I sometimes use a hand chopper to combine eggs, hash browns and sausage. It is all personal preference.
    Roll up the burrito and then wrap in plastic wrap. Once all are prepped and wrapped, place in Freezer bags and label.
