Cook With Me – Preparing 4 Freezer Meals

Tomorrow night on my Facebook Page, I will be prepping the four freezer meals below. I invite you to prep these meals with me. (The Facebook Video, from Oct 2017, is at the bottom of this post) 

Below you will find the ingredients for each recipe. They are all to feed 4 to 6 people (if you have young children you will get 6 servings). I will be prepping 2 meals for each recipe. It is more efficient to prep more than one of the same meal.

This week was all about getting back on track and getting organized. Between my birthday early last week (2 cakes and cupcakes as well) and getting back on track after being away for a few days, it was a slow start. I did stick to some of my goals, as you will read below, but I used this week to plan ahead and prep.

Make your Own – Slow Cooker Freezer Meals

 
I hate cooking and strive to make meal preparation as quick and easy as possible. When shopping for my groceries, I plan to have about 1 hour when I return home to do some prep. This is something I do regularly. If you have taken my "Saving Time & Money in the Kitchen" class, you know
I like to have things ready and simple.
Below you will find the recipes for some make-ahead Chicken Slow Cooker Freezer Meals. Preparing these is just one of the things I do to save time during the week/month.
Prep the bags, freeze, then pop into the slow cooker in the morning...et voila, supper ready 4-8 hrs later and no standing around the stove!
 
Before you start:
 
  1. Place your ingredients on the counter with a mixing bowl for each recipe.
  2. Label freezer bags with Recipe name, date and any additional instructions.
  3. Leave meat in the refrigerator until you are assembling the packs.
 
With all of these recipes, I have included measurements for 2 freezer packs to serve 2 adults. If you require enough for 2 adults and 1 child, you can use the same sauce measurements, and simply add another chicken breast or thigh. If you are looking for meals for 4 or more, simply adjust measurements to accommodate.
 

Quick Chick

Label Freezer Bag: Quick Chick, Date, 6 hours in slow cooker on low.

 
  • 1 cup Ketchup
  • 1/4 cup Brown Sugar, packed
  • 3 Tbsp Vinegar
  • 1 pkg Onion Soup Mix
  • 4 Chicken Breast or Thighs
  1. Mix the first 4 ingredients together in a bowl.
  2. Divide chicken into two freezer bags, and pour 1/2 sauce over each.
  3. Remove air from bag, seal and freeze flat in freezer.

 

Orange Chicken

 

Honey Garlic Chicken

 
 

Sesame Chicken

Label Freezer Bag: Sesame Chicken, Date, 6 hours in slow cooker on low.
Serve with rice and steamed veggies.
 
  • 1 cup Soy Sauce
  • 1/2 cup Brown Sugar, packed
  • 3/4 tsp ground Ginger
  • 2 tsp Sesame Oil (optional)
  • 2 Tbsp Ketchup
  • 2 Tbsp Sesame Seeds
  • 3 cloves Garlic, minced
  • 4 Chicken Breast or Thighs
  1. Mix sauce ingredients together in a bowl.
  2. Add chicken to the two freezer bags, and pour 1/2 sauce over each.
  3. Remove air from bag, seal and freeze flat in freezer.

 

Taco Chicken
Label Freezer Bag: Taco Chicken, Date, 6 hours in slow cooker on low. Shred chicken to serve.
Serve in taco shells with sour cream, grated cheese and any other topping you would like.
 
  • 1 medium jar Salsa (choose Mild, Medium or Hot to your taste)
  • 1 pkg Taco Seasoning
  • 4 -6 Chicken Breast or Thighs
  1. Mix sauce ingredients together in a bowl.
  2. Add chicken to the two freezer bags, and pour 1/2 sauce over each.
  3. Remove air from bag, seal and freeze flat in freezer.

Here are a few additional time-saving tips I share in my seminar:

Ground meats are easy to fry up with seasoning or onions and freeze in portion sizes. Then when you want to make tacos, Chili, Shepard's pie, etc...the cooked meat is ready and it's one less pan you need to clean!

 
~ Cook your Chicken for salads, fajitas or casseroles ahead of time. I buy chicken in bulk packs and cook it up in the oven in 2-3 dishes with different seasonings. Once cooled, I slice it up and freeze in freezer bags for future meals. Salads are made into a meal by simply taking a pack of cooked chicken out and thawing in the microwave!

Freezer/ Slow Cooker Meals: Orange Chicken

 

Here is another of my favorite Chicken Freezer recipes. I have adapted it to freeze ahead and cook in the slow cooker.

Prep the bags, freeze, then pop into the slow cooker to have an easy and yummy supper. I LOVE the convenience of stocking my freezer with these made ahead meals.

Before you start: 

 

  1. Place your ingredients on the counter with a mixing bowl for each recipe.
  2. Label freezer bags with Recipe name, date and any additional instructions.
  3. Leave meat in the refrigerator until you are assembling the packs.
I have included measurements for 2 freezer packs to serve 2 adults. If you require enough for 2 adults and 1 child, you can use the same sauce measurements, and simply add another chicken breast or thigh. If you are looking for meals for 4 or more, simply adjust measurements to accommodate.

Orange Chicken
 
Label Freezer Bag: Orange Chicken, Date, 6 hours in slow cooker on low.
Top with 1 tin Mandarin Oranges and 2 chopped green onions. Serve over Rice.
 
  • 2 large Carrots, chopped
  • 1/2  Red Onion, chopped
  • 1 Pepper, chopped (I used 1/2 red & 1/2 orange, you can use green or any you like)
  • 3 cloves Garlic, minced
  • 2 tsp ground Ginger
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1 can Frozen Orange juice
  • 4 Chicken Breast or Thighs

 

To Add after cooked:

  • 2 tins Mandarin Oranges
  • 1 Green Onions
 
  1. Chop veggies and divide into two freezer bags.
  2. Mix sauce ingredients together in a bowl.
  3. Add chicken to the two freezer bags, and pour 1/2 sauce over each.
  4. Remove air from bag, seal and freeze flat in freezer.
 
*** You can also cook rice ahead of time and freeze. Simply freeze serving portions in zippered freezer bags and freeze. To use, place in a bowl or sink of hot water. Pour in a bowl and fluff to serve with your meals. ***

Here is this week's $25 meal plan. The plan includes Sheet Pan Chicken & Veggies, Omelets, Lentil Soup and more. 5 family-friendly frugal meals on a budget each week based on sales in Atlantic Canada.

The whole idea in sharing these plans is to inspire you to find lower-cost options and plan ahead to save time and money. If you have specific dietary needs, you can alter some recipes or create your own plans. This is for inspiration, to prove it is possible to feed a family of 4 for supper meals on $25/week...customize as you wish. You can do it!

This $25 meal plan offers suggestions for anyone trying to really cut costs while keeping meals as "real food" or "from scratch" and unprocessed as possible. These are not my personal weekly meal plans, they are simple suggestions for meals on a budget. By providing 4-5 meal options for the week, there are usually leftovers that will cover the other days.

  • Omelets, Bacon & English Muffins (Omelets can have any leftovers, onions peppers, mushrooms, tomatoes, etc)
  • Sheet Pan BBQ Chicken with Baked Potato Wedges & Roasted Carrots (4 Chicken Leg with back, top with BBQ Sauce. Place along with veggies on a sheet pan and bake for 25-30 minutes at 400)
  • Honey Soy Chicken (recipe below) & Rice Stir fry (add frozen stir fry veggies $1.99 @ Sobeys)
  • Bagel Burgers (Make your favourite burgers and eat on a toasted, buttered bagel) and Homemade Fries
  • Lentil Soup

ON HAND (these are the items I tend to purchase and stock up on when they are on sale, using my $25 stock up budget/bi-weekly. Basic pantry items and things we use often.)

  • Diced Tomatoes ( stock up when on for $0.99 or less)
  • Garlic
  • Rice
  • Onions, Potatoes, Carrots (buy Onions, Potatoes, and Carrots in bulk and on sale = pennies per meal)
  • Celery left over from last week
  • BBQ Sauce ($1 on sale a few weeks ago)

Making homemade rolls, biscuits or Irish soda bread are all affordable options for additions to your meals.
